Which variety of potatoes is suited for making French fries?

Chose a mealy, large potato, that doesn’t turn color after cooking.

Mostly mealy potatoes are used (because of the high percentage of starch. In Belgium, best known is ‘Bintje’).

Other Belgian potatoes suited for making French fries: Agria, Première, Santé, Victoria, Astrix, Fontane, Markies, and Ramos.

Which oil should I use?

All oils with mention “for frying” are suited for frying.

Palm and soy oil are less suited because, although they are both resistant to high temperatures, both oils are rich in fatty acids.

Preferably choose vegetable oil to fry, such as peanut oil, colza oil, corn oil or sunflower oil.

For taste as well as for health, frying oil must be changed on regular base. It is time for fresh oil when the oil becomes darker and stickier and when it starts to smell badly. On average, this is after 10 times frying.

Always use qualitative good frying oil. Do not buy low quality oil, as this oil will decompose much faster than higher quality oil. This means that you will have to change your oil much faster!

 

In Belgium, as "Best Deep fryer" on the market we’d like to advise you the best oil, namely oil for deep-frying "Excellence" from Vandemoortele.

Can I fry with fat as well?

Your FRITEL fryer is NOT equipped with the TURBO SF ® System:

We advise the use of frying oil. Should you nevertheless want to use fat, note this has some risks and you need to act cautiously! 

First use
  • First melt the fat in a separate pan.  
  • When all the fat has melted, pour it into the fryer.
  • Only then the fryer may be switched on.  
  • Turn the thermostat knob on the desired temperature.  
  • When the control lamp switches off, the desired temperature is reached and the fryer is ready for use. 

Following uses

  • A layer of fat covers the heating element in the bowl. Pierce the fat layer with the back of a spoon until you reach the heating element or the bottom of the bowl.  
  • Gently turn the thermostat knob until you hear a ‘click’ and the control lamp switches on. When the control lamp switches off again, turn the thermostat knob again until you hear a ‘click’.  
  • When the fat has completely melted, you can turn the thermostat knob to the desired temperature.

You can melt the fat directly in your fryer:

First use:

Divide the fat in small pieces and put directly into the bowl (not in the basket). 












Turn the thermostat knob to the melting fat position and wait until the fat is completely melted. 
Only chose the temperature when the fat has completely melted.
When the control lamp switches off, the desired temperature is reached and the fryer is ready for use.



After use the fat will solidify again.













Following uses:

In the bowl there is a layer of fat, the heating element is not visible. Pierce the fat layer with the back of a spoon until you reach the heating element or the bottom of the bowl.
During previous uses water might have settled in the fat, coming from fresh French fries, or ice crystals from frozen food. This water is stuck under the solidified fat and cannot get out. When piercing the fat, the steam, produced when the water heats up, can get out. This prevents the formation of dangerous steam bubbles under the fat.  
Avoid water in the fat by drying off conscientiously the fresh French fries and by removing all extra ice from the frozen food. 





Turn the thermostat knob on the fat melting position to melt the fat.
Only chose the temperature when the fat has completely melted.

At which temperature do I bake which product?

Below is a list of appropriate temperatures and baking time to fry most common products. Please keep in mind that the given times are only indicative. The baking time may vary strongly according to the product.


Potatoe dishes
Fries, prefried: 4 - 6 min. 170°C
Fries, fried second time: 1 - 2 min. 190°C
Potatoe chips, waffles: 3 - 4 min. 190°C

Sweet dishes
Deep-fried solid doughnuts, Berliner doughnuts : 3 - 5 min. 190°C
Apple fritters : 3 - 5 min. 190°C
Doughnuts : 5 - 6 min. 190°C

Fish dish
Bread-crumbed fillet of fish : 3 - 4 min. 170°C
Sole, pike : 3 - 5 min. 180°C
Trout, codfish : 3 - 5 min. 180°C

Dishes with breadcrumbs
Potatoe croquette : 3 - 4 min. 190°C
Cheese croquette : 2 - 4 min. 190°C
Prawn croquette : 3 - 4 min. 190°C
Fish croquette : 3 - 4 min. 190°C
Appetizer croquette : 3 - 4 min. 190°C

How do I fry French fries?

First and foremost, the choice of potato is crucial for the success of the French fries. Best to use are frying potatoes, which are recognizable by their size and hardness.

Then you have to peel the potatoes and wash them thoroughly. Important is that you have to dry the washed potatoes with a dry and clean kitchen towel.

Now you can slice the potatoes into strips.

 

Frying fresh French fries in 2 steps:

 

1 Pre frying (Here the French fries are cooked until done) Set the deep fryer on 150°C-170°C (depending on the season and the type of

potatoes) and let the frying oil warm up, then fry the French fries for about 5 minutes (depending on the thickness of your French fries). Lift out the basket from the deep fryer and let the French fries cool down for a few minutes in the basket or in a bowl.

 

2 Finishing off (Which makes the French fries nice golden brown and crunchy) Heat up the frying oil to 190° C and fry the French fries for a second time, about 3 minutes (depending on how brown you like them) and put them in a bowl with kitchen paper on the bottom.

 

A few tips:

Always use qualitative good frying oil. If you have a FRITEL deep fryer with TURBO SF® System, you can fry with fat as well.

NEVER leave the basket with French fries hanging above the fryer after a first frying time, then the French fries will become flabby and NOT crunchy like they should be.

 

NEVER fry two different products at the same time. So : no French fries together with croquettes.

Change the oil (or frying fat) after approximately 10 frying times.

Fill the basket for maximum 2/3, since bigger portions leads to a less crunchy result.

 

Frozen French Fries

If you want to fry frozen French fries, make sure no ice falls into the oil.

You can prevent this by first putting the French fries into a colander to separate the ice from the French fries.

My deep fryer boils over, how can this be possible ?

This can have several causes:

 

Fresh food as well as frozen food mainly consists of water. Fresh potatoes consist for 75% of water.

 

During the first frying time, about 65% of this water gets into the oil. As the specific volume of water is heavier than that of oil, the water sinks to the bottom of the bowl(Cool Zone). The Cool Zone heats up gradually and reaches 100°C. The water will then be converted into steam, which has a lighter specific volume of water. At this point, your oil could start skimming and boiling over.

 

Tip: Always dry your French fries before frying

Tip: First put your frozen French fries in a colander, in order to remove the excess ice.

If your oil is dirty and should be replaced, it can start skimming or boiling over as well.

Tip: Change the oil. It’s not enough to fill up your deep fryer with partly fresh oil.

 

Your deep fryer can also boil over if you put too many frying food in it.

TIP: The quantity of frying food in your deep fryer can be determined by the content of your deep fryer. We advise you not to exceed more than 150 g of frying food per liter of content.

What is the difference between an anti dust lid and a filter lid?

An anti dust lid is only meant for dustproof storage of your fryer. The anti dust lid can never be on the fryer while the appliance is warming up, baking or cooling down.

The oil always has to be cooled down completely.

 

A filter lid can be on the appliance while the appliance is warming up, baking or cooling down.

Can the filter lid be put on the appliance while heating up?

Yes

A filter lid is equipped with a filter and some openings through which the vapor/steam can escape.

Can the anti dust lid be put on the fryer while heating up?

No

An anti dust lid, synthetic or metal, can never be put on the fryer while heating up. The lid is only meant for hygienic storage. Only put the lid back on the fryer when the appliance has cooled down completely.

Can the filter lid be put on the appliance while frying?

Yes

Thanks to the openings in the lid the steam can escape and thanks to the filter the lid can be put on the fryer while frying.

Can the anti dust lid be put on the fryer while frying?

No

The lid is only meant for hygienic storage. Only put the lid back on the fryer when the appliance has cooled down completely.

How many fries can I bake at once?

For an optimal result with crunchy baked fries, we suggest to use the following maximum quantity:

* fresh fries: max. 100 gr. per liter of oil
* deep frozen fries: max. 150 per liter of oil

Cleaning and maintenance of the appliance

How often do I have to change my oil/frying fat ?

This depends on different factors. First and foremost the time for changing the oil (or frying fat) depends on what you fry. If you only fry French fries, your oil will last much longer than when you fry cheese croquettes, meat balls, sate,…  Furthermore, you have to take into account that certain products completely decompose your oil (frying fat), such as paprika, parsley, bacon, cheese,… Low quality oil will be much cheaper, but it will have to be replaced much more often. The average time to change your oil is after 10 uses !

How do I clean my deep fryer?

Before using your deep fryer for the first time, we recommend to clean it.

Disassemble the deep fryer. Clean the control panel with a damp cloth. NEVER plunge in water. The housing and lid can easily be washed in the dishwasher or in warm soapsuds. The bowl and basket have to be cleaned as follows:

 

The bowl is made of stainless steel 18/10 and can be washed with a dishwashing brush. You may NEVER soak the basket in soapsuds because the tinned material can rust because of the aggressive detergents.

NEVER clean the basket in the dishwasher. The aggressive detergents in the dishwasher damage the tin-plating of the basket, which can make it rusty.

 

 

If you want to clean your deep fryer quickly, easily and safely, we advise you to use FRITEL cleaner for fryers.

Delicious French fries, but afterwards ... the washing up. Dirty and fatty borders, splashes everywhere, there’s no end to the cleaning!

Fill the bowl of the deep fryer with warm water at + 40°C and add about 10 caps of FRITEL cleaner for fryers. The product must soak in for +/- 15 minutes, then empty the bowl.

 

Rinse thoroughly and wipe with a soft towel.

The FRITEL cleaner for fryers is based on natural enzymes. So it’s environment-friendly, biodegradable and non-toxic.

 

You can also use it to clean other household appliances like fondue, barbecue, raclette, microwave oven, ...

The FRITEL cleaner for fryers can be applied to all materials like stainless steel, synthetic, enamel, etc.

Can the basket be put in the dishwasher ?

No.

The basket should be cleaned in hot soap suds with a dishwashing brush. You may NEVER soak the basket in soapsuds as the tinned material will get rusty because of the aggressive detergents.

Is it allowed to clean the bowl in the dishwasher ?

Yes

 

The bowl is made in stainless steel. However, it is advisable to clean the bowl in warm soap suds, regarding the aggressive detergents that are used in the dishwasher. The shine can otherwise disappear.

How do I clean a filter lid?

A filter lid can be cleaned in soapy water or is dishwasher proof.

At the same time the permanent filter in the filter lid is cleaned.

Do I have to replace the filter in the filter lid?

No

Our fryers are equipped with a permanent metal filter. This filter must not be changed, but needs to be cleaned once in a while together with your filter lid. This also means the filter must not be removed from the lid to be cleaned, but can be cleaned together with the filter lid in hot soapy water or in the dishwasher.

How do I clean an anti dust lid?

An anti dust lid can be cleaned in soapy water or is dishwasher proof.

The heating element turns color after use, is this normal?

The heating element of each fryer turns brown after the first use and this cannot be changed; this is perfectly normal.

 

To clean the heating element you can use hot soapsuds in which you leave the heating element to soak, for instance the bowl (then this is cleaned at the same time). Of course, the electrical control panel cannot touch the water. For easy, quick and safe cleaning of your fryer, we advise to use the FRITEL cleaner for fryers.

Technical questions

My deep fryer doesn't function anymore, what should I do ?

To prevent that you unnecessarily bring your deep fryer back to the shop, there are a few things you can check yourself :

 

1 Has the appliance correctly been assembled?

At the back of the fryer there are two guiding levers, these are vertical synthetic/plastic levers that connect the housing with the control panel. If the control panel is not properly attached to the guiding levers, the deep fryer will not work. This is for your own safety.

 

2 Your deep fryer switched off because of safety reasons.

For your safety, the deep fryer can switch off by itself. The deep fryer can be put back into operation by pushing the "reset"-button. This "reset"-button is the red button in or above the cable storage place.

 

3 Are the guiding levers undamaged?

One of the guiding levers has a sharp tip which switches on the deep fryer electrically each time you put it back together. If this sharp tip has been broken, the deep fryer will not work. If this is the case, you can send us an e-mail or get in touch with your shop, pass the details of your deep fryer (date of purchase, model deep fryer, production date, ...). These details can be found in the cable storage place at the back of the fryer.

 

4 None of the previous problems.

If none of the previous problems is the cause of the non-functioning of your deep fryer, you would better get in touch with your shop, or you can always contact us as well.

Where can I bring my deep fryer for repair?

To insure your warranty we have to inform you that you may never try to repair your appliance yourself. This is on one hand dangerous for yourself and as well contradictory with the current European regulation. Only designated people may repair electrical appliances. You can always bring your appliance to the store where you bought it.

What should I do if the cord is damaged?

If the cord is damaged, the fryer cannot be used anymore.

You never can try to repair your fryer by yourself. This is dangerous for you and contravenes with the prevailing European regulation. Only appointed persons can repair electrical appliances. You always can bring your fryer to the shop where you bought it.

A bracket at the back of the housing broke off

You can easily replace the bracket yourself.

Where do I find the rating plate?

The rating plate can be found at the back of the fryer, inside the cord storage. 

What is Cool Zone?

The heating element of the fryer is located directly in the frying oil. You don’t have to wait, the oil achieves the desired temperature in no time. 

 

Moreover, the frying residues sink in the Cool Zone and don’t burn. The frying oil lasts up to 3 times longer.
